Roasted Autumn Vegetables

Not going to lie. I really enjoy a night to myself from time to time. Maybe it's because they are so few and far between. Maybe it's because I can catch up on back to back episodes of The Real Housewives. (don't judge me) Or maybe it's because I can cook whatever I want for myself that night. (I think it's an even combination of all the above.)

Don't get me wrong. I love my husband, and I love being around him ALL the time. I just think that it is completely healthy to enjoy alone time, as well. In fact, that brings to something else I really enjoy about my alone time: it makes me MISS my husband. It reminds me, in a completely different, almost puppy-love sort of way, of how important he is to me. It's easy to see his importance through his actions when we are together, but it's also nice to discover his value through his absence, when we are not.  

Last night I got to experience all of the aforementioned favorites.


Some would relish in the freedom of NOT having to cook when their husband's away, but a foodie like myself (who has a picky eater of a husband, like I do) looks for an opportunity to whip up something he would never eat.



Roasted Autumn Vegetables
 (original recipe)

1 lb butternut squash (peeled & cubed)
1 1/2 cups brussel sprouts (trimmed & halved)
1 turnip (peeled and cubed)
1 shallot (thinly sliced) 

1/4 tsp pink himalayan sea salt (or any salt)
1 tsp fresh or dried thyme
1 tsp fresh or dried sage
1 tsp fresh or dried rosemary
1 tsp fresh or dried oregano
1-2 Tbsp EVOO
Freshly Ground Pepper

Spray an 11x17 baking sheet with cooking spray. In a bowl, toss together the vegetables, herbs, oil, salt & pepper; lightly coating the vegetables with just enough oil to cover them evenly. Spread the vegetables on the baking pan and cook for 35-40 minutes. Immediately serve and enjoy :)
