Oreo Cookie Balls

Yesterday I decided to bust out my new food processor (a Christmas gift, compliments of my parents) and make some homemade salsa and Oreo Cookie Balls - or, if you're like my future sister-in-law & don't feel comfortable saying "balls," you can call them Oreo "Truffles" ;)

Bran seemed to like the salsa, but I think it could use some improvement so...I'll be making some edits to it before posting it for all of you. In the meantime, please do yourself a favor and make this shredded beef. I made shredded beef taco last night and...

...side note: I LOVE that this blogger suggests you make fried taco shells! Fried shell tacos are one thing that immediately bonded Bran & I when we first started dating. His mom always made them growing up, as did mine. So unbeknownst to me at the time, I happened to make fried taco shells one of the first times I had him over for dinner...and...let's just say it was like kryptonite for Bran. He was smitten from that point on... just sayin'  (Okay...I might have been, too.)
 
So, back to the beef... 

1. make it
2. fill your fried shell tacos with it
3. put on any other topping(s) of your choice
4. get ready for your taste buds to thank you

After your all good and digested, grab a glass of milk and enjoy one of these.



Oreo Cookie Balls 

1 pkg Oreos (I use Reduced-Fat in an attempt to cut some calorie corners)
1 8oz pkg Cream Cheese (Again, I use reduced fat)
1 pkg Chocolate Chips or Chocolate Bark (I used Ghiradhelli chips, which I think set a little better than the Nestle ones. They didn't melt on my fingers as quickly as Nestle has in the past. Chocolate bark coating is also a good option, which I will probably try out next.)

Line a cookie sheet with wax paper. Place Oreos in food processor. Blend until finely crushed. Pour crumbs into bowl, mix in cream cheese until blended throughout. Roll into 1inch balls and lay on lined cookie sheet. Let set in fridge for 1 hour. Melt chocolate and get to dipping!

**For those of you don't have a food processor...DON'T WORRY! You can still make these delightful little treats. Just put your oreos in a large gallon sized freezer bag (double bag it, just in case) then grab a rolling pin or mallet and crush by hand.**
